Bihari Style Baingan Chokha

For veg cuisines, many options are not restricted to a restaurant but also can be prepared at home. One such is the famous Bihari Style Baingan ka Chokha. Prepared with love, this dish gives out a smoky and spicy essence that is mainly savored during the winter, but also in summer, depending on your preference. If you are an eggplant lover, you would certainly be keen on preparing this baingan chokha recipe and savoring the same with roti or Indian bread.

Here’s all you need. 

Ingredients:

  • 1 medium size brinjal 
  • 1 medium tomato
  • 1 medium size chopped onion
  • 2-3 chopped green chillies
  • 2 tsp coriander powder
  • 1 tsp chilli powder
  • Salt to taste
  • Sugar (less than a tsp)
  • 1 tsp coriander leaves
  • 1 tsp lemon juice
  • 4 tbsp Doctors’ Choice Kachi Ghani Mustard Oil

Procedure:

  • Start by roasting the brinjal on a flame. Once the skin begins to peel off, turn it off and insert a fork to ensure the brinjal is moist and soft on the inside
  • Then start roasting your tomatoes for roughly 2 mins 
  • Boil and mash all the potatoes, onion, and tomatoes together. Once done add in the coriander leaves and green chillies
  • Heat some organic mustard oil in a pan and add in the chopped onions and mashed tomatoes. Add in some salt and season the onions in it until they are brown. Add in the mashed brinjal followed by the mashed potatoes. Mix them well 
  • Add some salt, coriander powder, and red chili powder, and mix it all well. Saute them all for roughly 3-4 minutes till they all become a fine mixture.  Add in some sugar and saute it for 1 more minute
  • Turn off the flame and add some coriander leaves and lemon juice for garnishing. Enjoy delicious baingan chokha with bread or roti.
