Soybean Kofta Curry

Soybean Kofta Curry is a scrumptious and unique dish made with a fusion of spices that hits every note of your palate. It has a mouth-melting texture that crumbles in your tongue with each gentle bite. Tasty, rich and an utter delight for your tastebuds, this recipe is loved by both the young and the old! 

Its versatility makes it even more sought after as it can be paired with your favourite type of rice, paratha, or even naans.

Ingredients : 

For Kofta – 

  • 1 cup soya granules
  • 2 medium-sized potatoes, boiled and mashed
  • 1 tsp grated ginger
  • 2 green chillies, finely chopped
  • 2 tbsp coriander leaves, finely chopped
  • 1 tsp gram flour
  • A pinch of salt 
  • Doctors Choice Refined Soybean oil

For curry – 

  • 1 tsp cumin seeds
  • 2 medium-sized onions, finely chopped
  • ½ tsp ginger garlic paste
  • ¼ tsp turmeric powder
  • 1 tsp red chilli powder
  • A cup of tomato puree
  • ½ cup water
  • ¼ cup of milk
  • 1 tsp garam masala
  • Salt to taste
  • 2 tsp mint leaves, crushed
  • 2 tbsp Doctors Choice Refined Soybean oil

Method : 

To make this cooking process easier to understand, we have divided it into two steps.

To Make the Kofta – 

Soak the soya granules in a bowlful of hot water for about 10 minutes till it becomes soft. Once soft, drain out the water and then squeeze out excess water from the soya granules by pressing it with your palms. 

Add the soya granules to a bowl and incorporate the mashed potatoes, chopped ginger, green chilli, coriander leaves, gram flour and salt. Combine all the ingredients till it forms a dough-like texture. Feel free to add more gram flour if the mixture is sticky. 

Take a small portion of the dough and roll it between your palms to make ball-shaped sizes of your choice. Continue doing this with the rest of the dough. 

Heat a sufficient amount of Doctors Choice Refined Soybean oil in a deep pan till it gets hot.

Gently place the soya balls into the hot oil one at a time. Make sure that the flame is on medium or else the Kofta can get burnt easily. Fry the Koftas till it becomes a golden brown colour.

Strain it out from the oil and place it onto an absorbent paper.

To Make the Curry – 

Heat 2 tablespoons of Doctors Choice Refined Soybean oil in a pan till it is hot. Throw in the cumin seeds till it splutters. 

Add the chopped onion and sauté it till it becomes golden in colour. Include the ginger garlic paste and sauté it for about 4 minutes on medium flame.

Next, add in the turmeric powder, red chilly powder and salt. Stir for 2 minutes. 

Gently incorporate the tomato puree into the mix and cook till the oil separates from the mixture. Pour in ½ cup water and mix for 2 minutes, then add in the milk in small portions, stirring continuously till the gravy starts boiling and thickens.

Lastly, gently add the fried Koftas one at a time. Mix them into the grave while ensuring that this is done carefully as the Koftas can easily break. 

Garnish with garam masala and crushed mint leaves. Cover the pan with a lid and cook for 2 minutes.

Best served when hot with a bowlful of jeera rice. Enjoy!
